One of the kids favorite meals is string beans and bacon and sometimes we like to switch it up to Asparagus when it’s in season. Since bacon was just on sale at my favorite meat provider, this asparagus and bacon recipe comes in perfect timing. It’s super simple to make and absolutely delicious! You can add onions, mushrooms, or garlic as well if you’d like. You can also wrap the Asparagus with the bacon and bake it, which is just as tasty!
Asparagus and Bacon Recipe
Ingredients:
- 1 lb. Asparagus
- 4-6 slices Bacon, chopped
- Salt (to taste)
- Pepper (to taste)
Directions:
Heat a large pan until it is very hot, then add your chopped bacon.
Cook for about 8 minutes (or until the bacon is crispy).
Chop off about a half inch up to a full inch of the ends of your asparagus as they tend to be a little tough.
Add your asparagus to the pan containing the bacon (do not drain the fat).
Cook for about 10 minutes, tossing/stirring often.
This combination would be great in pasta, soup, risotto, frittata, or even a quiche!
