Saving money doesn’t mean you have to skimp on taste.
A great way to save money on food is to cook and bake with recipes that use minimal ingredients. Less ingredients means lower cost! I started a collection of minimal ingredient recipes board on Pinterest to make sure I have an arsenal of recipes to choose from.
These lemon and white chocolate cookies are a shining example of the minimal ingredient concept. Just 5 ingredients create a dessert that tastes simply wonderful. The tangy, zingy lemon is smoothed out by the creamy white chocolate to create a taste party in your mouth!
5 Ingredient Lemon White Chocolate Cookies
Ingredients:
- 1 box of lemon cake mix {important note: you will NOT follow the directions on the box}
- 1 tub Cool Whip
- 1 egg
- 1/2 bag of white chocolate chips
- 1/2 cup powdered sugar (optional; to keep cookies from sticking together)
Directions:
Step 1: Preheat your oven to 350 degrees.
Step 2: Blend the cake mix, cool whip and egg together using a mixer with the dough hook attachments. In case you’re wondering, this is what the dough hook attachments look like:
If you don’t have a mixer or dough hooks that’s okay too. Grab a big sturdy spoon to stir and look at this as a great workout for your arms! There isn’t a lot of moisture in the dough so stirring by hand will require a little extra work.
Step 3: Next, fold in the white chocolate chips using a big sturdy spoon.
Step 4: Spoon heaping teaspoons of dough onto a greased or parchment paper lined cookie sheet. I’ve found that using a small melon baller works great at spooning out cookie dough and helps keep the cookies all the same size.
Step 5: Bake cookies at 350 degrees for 10 minutes.
Step 6: Let cookies cool completely then dip both sides in powdered sugar so they won’t stick to each other.
