Reader Janice asked, “Sarah, I would love your Alfredo recipe. I have made Alfredo sauce myself and it is very expensive. It’s super tasty but very expensive. The cheese alone, wow! Thanks in advance.”
Alright, I take that as a fun challenge. 🙂 Let’s make a sauce that doesn’t cost a lot of money!
So, last night I made a pasta for my family and it is delicious. Now please keep in mind, I rarely make the same recipe twice. It’s kind of hard for me to make recipes, because I don’t measure things and I use what I have on hand.
I’m getting better at remembering to measure for you all though. 🙂
The things I had on hand that you’ll need for this particular recipe (but please remember that cooking is all about putting your own spin on things, so if you don’t have something, substitute it)…
Cheesy Alfredo Pasta
Ingredients:
- 2 tsp butter (you can substitute organic coconut oil if you’d like; you just won’t get the same flavor, but it will help the recipe be healthier)
- 1 cup sour cream (which is about 1/2 of a 16 oz tub)
- 1 tsp minced garlic
- 1 cup shredded cheese (to answer Janice’s question, a 1 pound bag, which is 4 cups, of shredded cheese on sale is $3. So, I buy 5-10 bags when they are on sale and freeze them. I’m not really sure how much regular block cheese is; I rarely buy it unless it’s on sale, which at my store, never is).
- 1/4 cup parsley (love my parsley)
- 1/2 Beef Polska Kielbasa sausage rope (again, it’s what I had on hand because it was on sale for $2.99 and I stocked up; you could use leftover chicken or even hamburger. Shrimp would be yummy too). You can also leave out the meat or use a vegetarian meat substitute to make the dish vegetarian friendly.
- 1/4 cup milk
- 1/2 cup mixed veggies (I use frozen; this is a great way to sneak in veggies. What kid doesn’t like veggies covered in butter and cream?) LOL
- Pasta of your choice – fettuccine, linguine etc. (Buitoni was on sale this week; you can find it in the refrigerated section near the cheese. Albertson’s usually has this pasta on sale for a good deal).
Directions:
Step 1: Bring water to boil.
Step 2: Drop pasta and heat until cooked through. Drain and set aside.
Step 3: In a separate skillet, add sausage, cheese, sour cream, parsley, butter, garlic, and milk.
Step 4: Stir well, then add your veggies.
I added a little more sausage because it didn’t seem to be enough. 1/2 of the sausage rope total.
Step 5: Stir well and let simmer for 10-15 minutes on medium-high heat.
Step 6: Add cooked pasta.
Step 7: Mix well.

Funny story…my mom tried to feed my son liver last week. He’s going through this stage where he thinks it’s cool to be gross, so he tried it. Yesterday I asked him if he wanted liver and he said “NOOOOOOOOO!” and ran to his room. This gross stage of his is really annoying, so I’m hoping I just broke it! 🙂
