Overripe bananas are perfect to make easy and yummy Banana Muffins!
Banana Muffins
Ingredients:
- 3 Tbsps butter
- 1 ½ Cups all-purpose flour
- 2 Tsps baking powder
- 3/4 Cup sugar
- 1 Egg
- 1 Egg yolk
- 1 Tsp vanilla extract
- ½ Cup milk
- 1 Banana
Directions:
Step 1: Preheat oven to 350 F.
Step 2: In a bowl cream the butter and sugar.
Step 3: Add the egg and egg yolk and mix until fully combined.
Step 4: Incorporate the vanilla extract.
Step 5: In a separate bowl, mix the flour and baking powder.
Step 6: Transfer ¼ of the flour mix to the liquid mix.
Step 7: Mix well and add milk.
Step 8: Repeat until all the flour and milk are used.
Step 9: Slice the banana and add half of it to the mix.
Step 10: Pour the batter into a greased muffin tray.
Step 11: Top each muffin with a banana coin.
Step 12: Bake for 30-40 minutes or until done.
Step 13: Remove from the oven and let them cool down for 10 minutes. Serve and enjoy.
Tip: Before baking, sprinkle with some sugar on top for a crunchier twist.
