The flavors of tomato, basil, and mozzarella cheese just seem like the were made to be together, don’t they? And add a little balsamic vinegar…my mouth is watering just thinking about it! This Cucumber and Tomato Caprese Salad appetizer marries all those flavors together perfectly plus has the addition of crunchy cucumbers.

Cucumber and Tomato Caprese Salad Recipe
Ingredients:
- 1 pint heirloom cherry tomatoes, sliced in half
- 1 large cucumber, peeled and cut into slices and halves
- 1/2 cup fresh basil leaves, chopped
- 8 oz fresh mozzarella, mini balls (you could also cut a regular 8 oz chunk into smaller pieces)
- 2 tbs. olive oil
- 1 tbs. balsamic vinegar
- 1 tbs. Italian seasoning
- Salt & pepper to taste
Directions:
Step 1: To make the dressing, combine the olive oil, balsamic vinegar, and Italian seasoning in a small dish and set aside.
Step 2: In a large bowl, combine the cherry tomatoes, cucumber slices, fresh basil, and mozzarella.
Step 3: Pour the dressing over the salad and lightly toss.
Add salt & pepper to taste.
