These Halloween party cupcakes are a perfect treat for your party, get-together, or school function!
They come out moist and delicious and are a LOT of fun to make, especially if you have little ones who like to help you lick the spoons. 🙂
Halloween Party Cupcakes
Ingredients
- 1 c. sugar
- ½ c. butter or margarine, softened
- 3 egg whites
- 1 ½ c. flour
- 2 tsp. baking powder
- ½ c. milk
- 2 tsp. vanilla
- Halloween sprinkles for decorating for decorating the frosting
- 12 count muffin tin sprayed with non-stick spray or Halloween cupcake liners
- Yellow food coloring
- Red food coloring
Frosting Ingredients
- ½ c. butter, softened to room temperature
- 4 c. powdered sugar
- 2 tsp. vanilla extract
- 5-6 tbs. milk (you may want a little more or a little less depending on how thick you like your frosting)
- Red food coloring
- Blue food coloring
Directions
Step 1: Preheat the oven to 350 degrees.
Step 2: Combine the sugar, butter, vanilla, milk and eggs and mix well. Stir in flour, baking powder and mix well.
Step 3: To get the nice orange cupcake color add in 1 drop of red food coloring and 2 drops of yellow food coloring and repeat depending on how orange you want your cupcakes. I had to do this probably 3-4 times before I got the color I liked.
Step 4: Pour the batter evenly into the muffin tins and bake 18-20 minutes. Insert a toothpick at about 18 minutes. If it comes out clean your cupcakes are done.
Frosting Directions
Using a hand mixer, combine the softened butter, powdered sugar, vanilla and a few tablespoons of milk (start with 3-4). Beat until light and fluffy and add in another tablespoon or two of milk and continue to beat until nice a fluffy (about 3-4 minutes on high).
Purple Frosting Directions
Add 3 drops of red food coloring and 1 drop of blue food coloring and mix well. Repeat this step depending on how purple you want your frosting to be.
Once the cupcakes are completely cooled, frost generously and add some Halloween sprinkles on top.
*Makes approximately 12 cupcakes. Store in an airtight container up to 1 week.
