Lemon Poppy Muffins Recipe
Ingredients:
- 2 eggs
- ½ cup sugar
- 2 lemons juiced
- ¼ cup butter
- ¼ cup milk
- 2 cups flour
- ¼ cup poppy seeds
Directions:
Step 1: Preheat oven to 350F.
Step 2: In a bowl crack the eggs, add the sugar, milk, and lemon juice. Stir for 1 minute.
Step 3: Add the butter and flour and use a wooden spoon to stir the batter until evenly combined.
Step 4: Incorporate the poppy seeds and beat until the batter is uniform.
Step 5: Grease and flour a muffin pan and fill with the batter.
Step 6: Place in the oven and bake for 25 minutes or until done.
Step 7: When ready, carefully remove the muffin pan from the oven and take out the muffins.
Tip: For a dairy-free version, substitute the milk for almond milk and butter for coconut oil (or a dairy free butter). You can also use vegan substitutes for the eggs to make the recipe vegan friendly!
