Sometimes you’re in the mood for something sweet, but not too rich like chocolate. That’s where lemon comes in. Lemon desserts are delicious, and have a light, non-rich, airy flavor. This easy citrus lemon zest pudding is the perfect blend of sour, sweet, and airy light. Yum!
Individual Lemon Zest Pudding Recipe
Ingredients:
- 1 cup milk
- 1 tbsp lemon juice
- 1 tbsp lemon zest
- 1 egg
- 1/2 cup cornstarch
- 1/4 cup sugar
- 1/2 tsp vanilla extract
- Whip cream
Directions:
Step 1: In a saucepan over medium heat mix the milk, lemon zest, egg, and lemon juice.
Step 2: Slowly incorporate the cornstarch and sugar. Stir regularly.
Step 3: Cook until the first bubble forms, and reduce to low heat.
Step 4: Add the vanilla and stir for 2 more minutes.
Step 5: Remove from the heat and transfer to a bowl.
Step 6 : Let it cool down for 15 minutes, then cover it and take to the fridge for 3 hours.
Serve into small bowls and top with whipped cream.
Tip: Combine in the mixture some chopped almonds for a crunchy kick.
