Rice is a great inexpensive side dish to add your dinner, but it is often bland and boring. This healthy Lime Cilantro Rice is neither bland, nor boring and will have your family asking you to make more of it!
Lime Cilantro Rice Recipe
Ingredients:
- 2 Cups rice (jasmine, basmati, brown, white, wholegrain, pilau etc)
- 4 Cups water
- Pinch of salt
- 1/8 Cup lime juice
- 1/4 Cup chopped cilantro leaves
Directions:
Step 1: Boil the water in a kettle.
Step 2: Add the rice and salt to a pot and pour the boiling water into it.
Step 3: Set over medium-high heat and let it simmer with the lid close until no water is left. If you have a rice cooker or an instant pot, you can use those instead!
Step 4: Turn off the heat, stir in the lime juice and the chopped cilantro leaves.
Step 5: Close the lid and let it sit for 5 minutes.
Step 6: Serve in a bowl and enjoy.
Tip: Try the recipe using other herbs like rosemary and basil. Try adding garlic and chili next time. Change up the type of rice you use too! 🙂
