While I really enjoy cooking, there are those nights, as a single mom, where I just want to throw some simple ingredients in a pan, check it in 30 mins and have dinner ready.
THIS is one of those easy meals!
It’s one of those meals that you can customize to your own family’s tastes and you most likely already have the ingredients on hand.
My mom used to call this her “kitchen sink bake” because she put everything in there, but the kitchen sink. My version is a little lighter in ingredients, and yes, like her, I omit the kitchen sink! 😉

Cheesy Potato and Polish Sausage Bake Recipe
Ingredients:
- 10 red potatoes, diced
- 1 Hillshire polish smoked sausage rope
- 20 pepperchini’s (I used Giuliano Mild Pepper Rings)
- 1 can corn
- 1 cup milk
- 1- 8 oz package of shredded cheese
- 1 TBSP Italian seasoning
Directions:
Step 1: Preheat oven to 400 degrees. Spray a Corningware dish with organic coconut oil (I use this one) to prevent sticking.
Step 2: Add 10 red potatoes, diced to your baking dish.
Step 3: Layer polish sausage over the potatoes.
Step 4: Add corn, pepperchini’s, and milk to the top.
Step 5: Cover top with shredded cheese and Italian seasoning.
Step 6: Cover with aluminum foil and bake until potatoes are fork-tender.
Step 7: Remove aluminum foil and continue cooking until the cheese is golden brown.
Let cool and serve.
