I eat soup all year round (even in the summer). I know, I know, I’m weird, but I don’t care! I love me some soup!!!
It fills your tummy and feels like a warm hug. But I don’t like the same recipes all the time.
This homemade chunky potato soup is a very simple and easy to make recipe that is packed with potato flavor, perfect for your recipe arsenal and suitable for vegetarians!
Creamy Potato Soup
Ingredients:
- 2 Tbsps butter
- ¼ Cup flour
- ¼ Cup heavy cream
- 2 Cups water
- 3 Red potatoes
- Chopped chives to taste
- Parmesan cheese to taste
- Salt and pepper to taste
Directions:
Step 1: In a saucepan over medium heat, melt the butter.
Step 2: Add the flour and mix it, until you have a thick batter like texture.
Step 3: Stir in the heavy cream, then add the water, salt and pepper.
Step 4: Chop the potatoes and add them.
Step 5: Cover and let it simmer for 30 minutes.
Step 6: Serve and top with the Parmesan cheese, chopped chives, and more pepper.
Tip: Add some Sriracha sauce for a spicy kick. Leeks would also be great in this soup, leeks and potato go so well together!
