Simple Sweet Potato Bake Recipe
Ingredients:
- 1 Garlic clove
- 2 Sweet potatoes
- 1 Large red bell pepper
- 1 Cup chopped spinach
- Drizzle honey
- Drizzle olive oil
Directions:
Step 1: Preheat oven to 350F.
Step 2: On a cutting board, minced the garlic clove.
Step 3: Chop the sweet potatoes and the red bell pepper.
Step 4: Grease a baking dish with olive oil and transfer everything into it.
Step 5: Add the chopped spinach.
Step 6: Drizzle a bit of honey on the top. (Tip: to make the dish vegan friendly, just swap out the honey for agave or maple syrup, for example)
Step 7: Bake for 15 – 20 minutes. Serve in bowls and enjoy.
Tip: Add some chili powder for a spicy kick.
